FRIED ZUCCHINI SLICES (Thanks to a call from a  Party Line Listener)
Slice zucchini in slices for frying.  Beat 1 egg in a dish.  Put some flour seasoned with salt and pepper in another dish.  Dip the zucchini slices in beaten egg, then coat with seasoned flour and fry in butter until tender.  Or instead of flour, use crushed Ritz Crackers.
