2015 Recipes-Basil & Mozzarella Grilled Cheese

  • Whole wheat bread

  • 1 recipe of basil spinach pesto

  • 1 large tomato, thinly sliced

  • 1 cup shredded Mozzarella cheese

Spread 1 tablespoon of pesto on each slice of bread. Sprinkle 2 tablespoons of Mozzarella cheese on bread, then top with 2-3 slices of sliced tomatoes. Sprinkle 2 more tablespoons of cheese on top of the tomatoes.

Cover with remaining slice of bread. Grill sandwiches on a frying pan or a griddle over medium heat until bread is browned and cheese is melted.
