Refrigerator Pickles

• ½ medium cucumber, peeled and sliced very thin
• ½ medium white onion, peeled and sliced very thin
• 2 teaspoons whole peppercorns
• 2 teaspoons mustard seeds
• 1 tablespoon salt
• 1 cup apple cider vinegar
• 1 cup water
• 2 tablespoons brown sugar

Place sliced cucumber, onion, peppercorns, and mustard seeds in a Mason jar. In a medium-sized saucepan, bring the vinegar, water, salt, and sugar to a boil. Lower the heat to a simmer and stir until the salt and brown sugar has dissolved. Gently pour the hot liquid over the cucumber and onion slices. Make sure that all the cucumber and onion slices are submerged. Cool, cover, and store in the refrigerator until ready to add to your favorite food.
