Chicken and Bacon Shish Kabobs


1/4 cup soy sauce

1/4 cup cider vinager

2 tabls honey

2 tabls canola oil

2 green onion

10 mushrooms

3 skinless, boneless chicken breasts

1/2 pound thick but bacon

8 oz. pineapple chunks

8 skewers


-mix the soy sauce, cider vinegar, honey, canola oil, and green onions in bowl.

-cut chicken breasts into cubes and place the mushrooms and chicken into the mixture, and stir to coat. Cover and marinate for 1 hour.

-wrap marinated chicken with bacon and then skewer keeping bacon in place

-alternate chicken with pineapple and mushrooms until kabobs are all filled (keep roughly 1 inch of space on each end of skewer for flipping when grilling)

-take remainder of marinade and simmer for 10 minutes, set aside for grilling

-Lightly oil grill grate, turn grill to high heat, grill kabobs for 15-20 minutes until fully cooked

-periodically brush marinade onto kabobs while grilling



Tip: if you do not like certain itemsĀ  or want more variety add otherĀ  meat, veggies or fruits such as beef cubes, peppers and onions.
