Minnesota May egg production was down 14 percent from in April, according to the USDA National Agriculture Statistics Service Minnesota Field office. Total eggs produced in May numbered 220 million. The number of layers in production was just under 10 million head also down 14 percent from April but only 7 percent from this time last year.
